Meet Will Mowbray, a Yorkshire native who grew up immersed in the abundance of his parents' market garden. From a young age, he cherished the moments spent with his family, joyfully podding broad beans around the kitchen table. It was during this time that he discovered the fundamental role of good produce in creating exceptional dishes.
Driven by his fascination with artisan cheese makers, Will sought out a position at La Fromagerie. Under their expert guidance, he delved deeper into the world of fine ingredients and learned the importance of sourcing high-quality produce. Inspired by the culinary works of Sam and Sam Clark of Moro, he took up a position in their kitchen learning to cook at their renowned restaurant, where his passion for Mediterranean cooking blossomed.
The opportunity to take over a cafe in a 5 acre walled garden came up in North Yorkshire, called The Vinehouse cafe this gave him a chance to create something truly his own. Armed with the invaluable knowledge gained from both Moro and La Fromagerie, Will returned to Yorkshire at the age of 22 and transformed a beloved vegetarian garden café into a thriving, acclaimed establishment. Recognized as a “hidden gem” in the Good Food Guide, it was here that he honed his appreciation for well-grown vegetables and discovered the best ways to prepare them.
Eventually, London called him back when fate led him to meet Anna, now his wife, during his time as Sous chef at Carousel London. While there, he absorbed knowledge and new skills from a multitude of ever-evolving guest chefs and crafted bespoke events for clients. Later, he took charge of a café in Matches Fashion flagship store, 5 Carlos Place, located in Mayfair. Currently, he divides his time between Northern Spain and the UK, along with his young family who are his toughest food critics.
Will finds great joy in combining work and travel, curating exceptional events that take him from the sun-soaked landscapes of Provence to the lush gardens of Somerset, where he is currently cooking the wonderful vegetables for Charles Dowding No dig courses days and garden dinners.
When not toiling away in the kitchen, you'll find Will hunting for the perfect wave at his local surfing spot, exploring Spanish markets in search of incredible produce, or seeking inspiration in local restaurants, where he indulges in the vibrant flavors of the region.
